Il profumo dell'inverno

Anatra all'arancia, il profumo dell'inverno


L'altro giorno ho visto delle arance, o meglio ho sentito il loro profumo e ... non ho saputo resistere. Le ho comprate in quantità industriali. "Tanto" mi sono detta "spremute o mangiate le facciamo fuori tutte".
Poi sono andata a fare un giro in un mercatino di piccoli produttori che si tiene due volte alla settimana proprio vicino a casa mia. E lì l'ho vista, bella cicciottella che mi faceva "ciao ciao" con la zampina.
Una bella anatra era lì per me.
Beh l'associazione è stata ovvia

1 + 1 = .....1.
Arancia + anatra = anatra all'arancia

Ecco allora che un fiume di ricordi si è liberato e mi ha portato indietro nel tempo a  quando mia madre si era invaghita di questa ricetta e continuava a dire "Ci puoi credere? Tutti ne parlano, sembra una cosa complicatissima ed invece è la ricetta più semplice del mondo".
In effetti è proprio così. 

Anatra all'arancia

Questa è la ricetta semplificata che aveva trovato mia madre dopo varie sperimentazioni. Facile, veloce e buona.

Un'anatra
Succo di 4 arance
Succo di 1 limone
La scorza di 2 arance tagliata a fettine sottili
2 cucchiai di Grand Marnier
1 cucchiaio di aceto bianco
1 cucchiaino di maizena

Fiammeggio l'anatra per togliere le pennette rimaste qua e là. La sistemo nella teglia e la metto in forno a 200° (per ogni mezzo chilo di anatra bisogna contare mezz'ora circa)
Nel frattempo in un pentolino faccio caramellare lo zucchero e mentre si scioglie aggiungo piano piano l'aceto. Quindi aggiungo anche il liquore e il succo di arance e limone. Faccio bollire e poi spengo il fuoco.

Quando l'anatra è cotta la tolgo dalla teglia e la dispongo sul piatto.Elimino il grasso in eccesso dalla pentola
dove verso invece le scorze di arance e il succo. Porto a bollore e faccio cuocere per 2 minuti.
Sciolgo la maizena in un pochino d'acqua e la verso nel sughetto, serve per rapprenderlo un pochino.
Spengo e verso la salsina sull'anatra.
Decoro con qualche fettina di arancia e porto in tavola.

Duck in orange sauce
This is the simple recipe that my mother had found after several trials. Easy, fast and good.

Duck
Juice of 4 oranges
Juice of 1 lemon
The zest of 2 oranges, thinly sliced
2 tablespoons Grand Marnier
1 tablespoon white vinegar
1 teaspoon cornstarch


Flame to remove the duck feathers remained here and there. I'll put in pan and bake at 200 degrees (for each pound of duck you have to count half hour)

Meanwhile in a saucepan dissolve the sugar and then I slowly add the vinegar. Then also add the liqueur and orange juice and lemon juice. I boil and then put out the fire.
