Elogio della torta di patate

Patate e formaggio. Ecco le basi del gattò di patate

Le patate, la mia passione. Il gattò poi è uno dei miei piatti preferiti. Da piccola assillavo mia nonna perchè me lo preparasse.

E' un piatto tipico napoletano e deve il suo nome al francese "gateau", torta, perchè di questo in effetti si tratta: una torta di patate.

Il dramma nel preparare il gattò è che non posso fare a meno di assaggiare gli ingredienti. Dalle patate lessate passando per i pezzetti di salame, la scamorza e la tenera mozzarella, passano tutti prima per il mio personalissimo controllo qualità

Del resto, diciamolo, il bello del far da mangiare è anche questo, impastare, toccare, annusare e assaporare i singoli alimenti e trasformare le singole meraviglie in un'unica sinfonia. e la preparazione del gattò è un concentrato di tutti questi gesti.
Si mi piace cucinare e mi piace anche mangiare!

Questa ricetta che l'ho trovata in un libro sulla cucina napoletana scritto da Jeanne Caròla Francesconi. Volevo provare una nuova versione senza allontanarmi troppo da quella ella mia infanzia.

In realtà il gattò ha tantissime varianti. Quello della mia nonna, ad esempio non aveva il prezzemolo e la mozzarella. Esiste poi la versione che propone la salsiccia napoletana, bella rossa perché ricca di peperoncino, al posto del salame. E' sicuramente la ricetta più "mediterranea", ma non tutti gradiscono il gusto piccante.

Altra cosa è poi il gattò che elimina completmente il salame per sostituirlo con il prosciutto. Ecco questa versione, secondo me, è troppo edulcorata, si perde un po' il carattere deciso di questa ricetta.

Ma comunque vada, in qualsiasi versione venga proposto, il gattò di patate deve sempre essere spolverizzato da pane grattugiato.


Gattò di patate

  • 1.5 kg di patate
  • 100 gr di burro a pezzettini
  • 100 gr di parmigiano grattugiato
  • 50 gr di pecorino (o formaggio di capra duro) grattugiato
  • un piccolo mazzetto di prezzemolo tritato
  • 4 uova
  • 2 albumi montati a neve ben ferma
  • 100 gr. di salame (meglio se è piccante) tagliato a pezzettini piccolini
  • 100 gr di provola affumicata tagliata a dadini
  • una mozzarella fiordilatte tagliata a fettine sottili (250 gr circa)
  • burro per ungere la tortiera
  • sale e pepe
  • pane grattugiato.
Lavo le patate e poi le faccio bollire con tutta la pelle. Le sbuccio e le schiaccio ben bene. Aggiungo il burro a pezzetti, il parmigiano, il pecorino, la provola affumicata e il salame. Impasto mescolando bene con le mani. Aggiungo poi le uova e il prezzemolo tritato. Insaporisco con sale (non troppo visto che nell'impasto ci sono già i formaggi) e pepe. Infine incorporo i bianchi d'uovo montati a neve.

Imburro una tortiera (magari di quelle con la cerniera) e cospargo le pareti con il pane grattugiato.

Dispongo sul fondo una metà dell'impasto. Livello il tutto con un cucchiaio di legno e adagio le fettine di mozzarella. Ricopro con la seconda metà dell'impasto.
Spolverizzo con il pane grattugiato e metto in forno a 190 - 200 gradi per 20 - 30 minuti.

Al termine della cottura (quando la superficie sarà ben dorata) tolgo dal forno e lascio raffreddare per 20 minuti.
Apro la cerniera della tortiera e servo tiepido o anche freddo accompagnato da un'insalata verde.

In praise of potato cake

Potatoes, my passion. The "Gattò" is one of my favorite dishes. When I was a child I often asked my grandmother to prepare it.
It 's a dish of Naples and takes its name from the French gateau, cake, because this actually is: a potato cake.

The drama in preparing the gattò is that I have to taste the ingredients. From boiled potatoes through the pieces of salami, smoked cheese and the tender mozzarella, all first pass for my own personal quality control.

Moreover, let us say, the beauty of cooking is also this, mix, touch, smell and taste each food and transform the individual marvels into a single symphony, and the preparation of the gattò is all these gestures.
Yes I like to cook and I like to eat too!

I found this recipe in a book on Neapolitan cuisine written by Jeanne Carola Francesconi. I wanted to try a new version without straying too far from the recipe of my childhood.

In fact, the gattò has a lot of variations. My grandmother's gattò, for example, did not have parsley and mozzarella too. Then there is the version that offers the Neapolitan sausage, red pepper because is rich of red peppe, instead of salami. It 's definitely the more "Mediterranean" recipe, but not all like spicy taste.


Another version is the gattò that completely eliminates the salami and replace it with the ham. This version, in my opinion, lose his decisive character of this recipe.

But whatever happens, in any version is proposed, the cat potatoes should always be dusted with bread crumbs.


Potatoes cake

  • 1.5 kg of potatoes
  • 100 gr of butter into small pieces
  • 100 gr of grated parmesan cheese
  • 50 g grated pecorino cheese (or goat cheese)
  • a small bunch of parsley
  • 4 eggs
  • 2 egg whites beaten
  • 100 gr. of sausage (hot is better) cut into small pieces
  • 100 gr of provola affumicata (smoked cheese) cut in small pieces
  • a mozzarella cut into thin slices (250 gr)
  • butter for greasing the pan
  • salt and pepper
  • breadcrumbs

I wash the potatoes and then I boil with the skin. Then I peel and mash them very carefully. I add the butter, parmesan, pecorino cheese, the provola and salami. Mix well with hands. Then add the 4 whole eggs and chopped parsley. Season with salt (not too much because there are already the cheese) and pepper. Finally, incorporate the egg whites beaten stiff.

Grease a cake pan (perhaps those that can be opened) and sprinkle the sides with the breadcrumbs.
Put on the bottom half of the dough. Level, all with a wooden spoon and put on the slices of mozzarella. Cover with the second half of the dough.
Sprinkle with breadcrumbs and bake at 190 to 200 degrees for 20 to 30 minutes.

At the end of cooking (when the surface is golden brown) take off from the oven and let cool for 20 minutes.
Remove from pan and serve warm or cold accompanied by a green salad

Quella zucchina di mia sorella




Da qualche anno ormai a Natale ci ritroviamo a casa mia, Ognuno porta qualcosa si mangia (molto) e si chiacchiera (tanto).

Ogni anno è sempre la stessa storia: io cosa porto? Faccio questo che ne dici? Allora io faccio la macedonia ok? Ho cambiato idea invece del dolce faccio la macedonia che dici? Anche tu macedonia? Ma quante macedonie mangiamo a Natale?

Insomma parliamo di cibo per un mese, lo mangiamo e poi passiamo il mese successivo a telefonarci per scambiarci le ricette.

Questa ricetta l'ha porposta mia sorella Dalia che l'ha trovata su una vecchia rivista di cucina. 

Io ho solo fatto una piccola variazione. Ho aggiunto delle noccioline tritate nel crumble.  Hanno portato un pizzico di sapore in più e una maggiore consistenza alla crosticina di superficie, il crumble appunto.

Ultimo suggerimento: sotto la crosta il crumble è molto morbido e servito nel piatto non è bellissimo da vedere (mentre è veramente molto buono). Si può proporlo in piccole cocottine individuali (nella foto) diminuendo i tempi di cottura (una decina di minuti circa). Lo si serve così, nella cocottina, caldo o appena tiepido, anche come antipasto.


Crumble di zucchine
  • 1 kg di zucchine
  • 1 mozzarella fior di latte
  • 3 cucchiai di pecorino
  • 2 spicchi d'aglio
  • sale
Per il crumble:
  • 3 fette di pancarré
  • un mazzetto di prezzemolo
  • qualche foglia di basilico
  • 200 gr di nocciole tritate

Grattugio le zucchine a fiammifero e le lascio scolare per una mezzora circa e quindi le asciugo premendole un pochino con la carta da cucina.
Faccio soffriggere leggermente uno spicchio d'aglio e aggiungo quindi le zucchine e poco sale (la ricetta prevede il pecorino, che è già di per sé abbastanza salato). Lascio insaporire per qualche minuto, tolgo gli spicchi d'aglio e spengo il fuoco.

Nel frattempo imburro una pirofila e taglio la mozzarella a fettine sottili. Metto nella pirofila uno strato di zucchine, circa (1/3 del composto) e uno strato di mozzarella e poi spolvero con il pecorino. Continuo fino ad esaurire gli ingredienti.

Preparo il crumble mettendo nel mixer le fette di pancarré, il prezzemolo, il basilico e trito il tutto. Aggiungo le nocciole al composto e mescolo il tutto.
Spolverizzo il crumble sulla superficie dello sformato di zucchine e metto in forno a 180° per 20 - 30 minuti (la superficie deve essere ben dorata).
Lo servo caldo o al massimo tiepido.

That's my sister zucchini

We are often at Christmas at my house. Everyone brings something to eat (a lot) and talk (a lot too).

Every year is always the same story: What should I bring? I do this what do you say? I make the fruit salad it's ok for you? I changed my mind instead of a cake I will made a fresh fruit. Wait a minute.... you also want to made a fruit salad? But how many salads we eat at Christmas?

I mean we talk about food for a month, we eat this and then we spend the next month to call us to exchange recipes.

This recipe comes from my sister Dalia who found it on a old cooking magazine.

I only made a small change. I added some finely chopped nuts in the crumble. They brought a little more flavor and better texture of the crust surface.

Final tip: under the crust is very soft and the crumble served in the plate is not beautiful to see. You can offer it in small individual pot (on the picture) by reducing the cooking time (about ten minutes).
Hot or warm, even as a starter.

Zucchini crumble

  • 1 kg zucchini
  • 1 mozzarella fior di latte
  • 3 tablespoons pecorino
  • 2 cloves garlic
  • salt
for the crumble
  • 3 slices of sandwich bread
  • a small bunch of parsley
  • a few basil leaves
  • 200 g chopped hazelnuts
Grate the zucchini as matches and let drain for about half an hour, pressing them a little wipe with paper towels.

I lightly fry a clove of garlic and then add the zucchini and a little salt (the recipe calls for pecorino, which is already quite salty). Cook for a few minutes, I remove the garlic cloves and put out the fire.

Una piccola tentazione

La coquille St. Jacques non è solo buona, è anche bella da vedere

Secondo, aperitivo o piatto unico, le coquille St. Jacques le adoro!


Coquilles St. Jacques al gratin

4 Coquille St. Jacques
La buccia grattugiata di un limone
Un piccolo mazzetto di prezzemolo ben lavato e tritato finemente
2 spicchi d'aglio tritato
2 cucchiai di pane grattugiato

Mescolo la buccia di limone, prezzemolo,aglio e pane grattugiato.
Ricopro ben bene le coquilles St.Jacques con il composto e inforno sotto il grill per pochissimi minuti.

4 Coquille St. Jacques
The peel of one lemon, grated
A small bunch of parsley, washed and finely chopped
2 cloves garlic, minced
2 tablespoons breadcrumbs

I stir the lemon peel, parsley, garlic and bread crumbs.
I hold very well the coquilles St Jacques with the mixture and bake under the grill for a few minutes.

Belle o brutte, ma sempre buone

Ci vuole pochissimo tempo per preparare questa delizia

Questa volta ho veramente esagerato, ma erano troppo profumate e non ho saputo resistere. e si perchè io le mele non le scelgo per la loro bellezza, ma per il loro profumo. E, devo dire, che le più profumate non sono necessariamente sempre le più belle.
Tra le mie mele preferite ci sono infatti le Annurche, piccolette e spesso anche bruttine.
Ma oggi ho preso delle mele Royal Gala, dal caratteristico colore rosso variegato di giallo. Ne ho comprate tante anche perchè ho vogli di sentire per casa il profumo di mele e cannella.

Crumble di mele

4 o 5 mele
Un pugno di uvette
100 gr di burro
3 cucchiai di zucchero
3 cucchiai di farina
2 cucchiaini di cannella

Sbuccio le mele e le taglio a dadini. Le mescolo con le uvette e metto il tutto in una pirofila da forno.
Con la punta delle dita impasto farina, burro, cannella e zucchero e trasformo il tutto n tante briciole che spolvero poi sulle mele.
Riscaldo il forno a 180°, inforno e lascio cuocere per mezz'ora, finchè non si forma una bella crosticina profumata di caramello e cannella.
Servo tiepido o freddo.
Per variare. prima di infornare si può cospargere la superficie con scagli di mandorle. Il dolce avrà  una nota croccante in più. Oppure si può aggiungere alla farina un paio di cucchiai di farina di mandorle.

Smells good

Apple crumble

4 or 5 apples
A handful of raisins
100 gr. butter
3 tablespoons sugar
3 tablespoons flour
2 teaspoons cinnamon

I peel apples and cut into cubes. I mix it with the raisins and I put everything into a baking dish.
With the fingertips mix flour, butter, cinnamon and sugar and turn it all into crumbs. I sprinkle it over the apples.

Preheat oven to 180 degrees, bake and cook for half an hour, until it forms a nice crust scented cinnamon-caramel.
Serve warm or cold.

To change. before baking you can sprinkle the surface with almond flakes. The cake will have a more crisp note. Or you can add to the flour a few tablespoons of almond flour.
Among my favorite apples, there are the Annurca, little and often ugly.
But today I took of Royal Gala apples, distinctive red variegated with yellow. I bought so many because I want the house to smell the scent of apples and cinnamon

Un dolce attimo

La casetta di panpepato pochi minuti ancora e non esisterà più

Non so come sia nata questa tradizione a casa mia ma, ogni anno, puntualmente alla vigilia di Natale, c'è il giorno della "costruzione della casetta".
E' un rito che mi ricorda molto una scena di costruzione di un mantra di sabbia fatto da monaci tibetani.
I monaci in silenzio, seduti per terra componevano un bellissimo mantra con sabbie dai diversi colori.
Una volta terminato si fermavano un attimo a guardarlo e poi..... via soffiavano sull'opera d'arte che in un attimo scompariva.

Qui, in forma diversa dato che non siamo monaci tibetani, ripetiamo un po' questo rito dell'effimero. Non siamo seduti per terra, ma stiamo in piedi intorno a un tavolo, non siamo silenziosi, anzi direi che siamo piuttosto vociferanti e ridanciani e non siamo per nulla composti, c'è chi ruba le caramelle e chi si lecca le dita, chi si offende e chi urla perché la sua ultima fatica sta miseramente cadendo verso il basso, ma..... ma tutti attendiamo la fine.

Una volta finita la casetta aspettiamo solo di farla sparire con un morso.

La casa di Hansel e Gretel

Per il biscotto:
750 gr di farina
3 cucchiaini di spezie miste in polvere(zenzero, cannella, chiodi di garofano, anice stellato)

1 bustina di lievito per dolci
2 cucchiai di miele
200 gr di zucchero di canna
100 gr di burro
2 uova

Per la glassa
4 albumi
650 gr di zucchero a velo
2 cucchiai di succo di limone

Per decorare:
Caramelle colorate

Sciolgo a fuoco molto dolce lo zucchero, il miele e il burro. Mentre si raffreddano mescolo gli ingredienti secchi, e cioè, la farina, le spezie e il lievito.
Quando lo zucchero si sarà raffreddato lo aggiungo alla farina e mescolo bene con una spatola. Aggiungo le due uova e continuo a mescolare.

Divido in due la pasta e la stendo bene cercando di darle una forma rettangolare. Con queste dosi riesco a fare 2 teglie da 90 cm,
Mentre scaldo il forno a 180° disegno su un cartoncino i vari pezzi della casa: 2 rettangoli un pochino più lunghi per i lati e 2 più piccoli per il davanti e il dietro. Disegno anche 2 finestre per ogni lato e la finestra e la porta d'entrata per il davanti. Due rettangoli lunghi come le pareti laterali ma più larghi forrmeranno il tetto. Ritaglio i vari pezzi e tango da parte.

Stendo sulla placca della carta da forno bagnata e strizzata. Vi adagio sopra la pasta e cuocio il tutto a 180° per circa 20 minuti, o finché il biscotto sarà di un bel colore dorato. Appena tolto dal forno appoggio le mascherine ritagliate dal cartoncino sul biscotto ancora caldo (e quindi ancora morbido) e ritaglio i vari pezzi che stendo a raffreddare su una griglia.

Nel frattempo preparo la glassa. Monto a neve ben ferma gli albumi e aggiungo un poco alla volta lo zucchero velato. Alla fine aggiungo anche il succo di limone,

Il biscotto raffredandosi diventa duro e si può quindi costruire la casetta unendo  i vari pezzi con la glassa.

Per far si che la glassa non diventi dura copro la terrina che la contiene con uno strofinaccio pulito e bagnato. Aspetto che la casa solidifichi.

Una volta terminata la "costruzione" spalmo la casetta di glassa e poi la decoro con caramelle colorate.

A sweet moment

I do not know how this tradition came to my house but every year, on Christmas Eve, there is a day of "building the house.

It 's a ritual that reminds me a scene that I saw some' time ago: the creation of a mantra of sand made by Tibetan monks.
The monks in silence, sitting on the ground, made up a beautiful mantra with sands of different colors.
When finished they stopped a moment to look at it and then ..... they blew away the work that disappeared in an instant.

Here, in a different way because we are not Tibetan monks, repeated a bit this ritual. We are not sitting on the ground, but we're standing around a table, we are not silent, but vociferous and laughing and we're not so quiet, someone who steals candy and licks his fingers, those who offend and who screams because his latest effort is badly falling down, but ..... but we're all waiting for the end.

.Once we finished the house we just waiting to make it disappear with a bite.

The Hansel and Gretel's house

For the biscuit:
750 gr flour
3 teaspoons powdered spices (ginger, cinnamon, cloves, star anise)
1 teaspoon baking powder
2 tablespoons honey
200 grams of brown sugar
100 g butter
2 eggs

For the frosting
4 egg whites
650 gr icing sugar
2 tablespoons lemon juice

To decorate:
Colorful candies

I bake slowly sugar, honey and butter.
Meanwhile I mix the dry ingredients: flour, spices and baking powder.
When the sugar has gone cold I put it in the flour and stir well. Then I add the eggs and continue to mix.

I divide the dough in two and giving them stretch out a rectangular shape. With these doses can make 2 pans of 90 cm,
Preheat oven to 180 degrees. In the meantime, I draw on paper the various parts of the house: two rectangles a little longer for the sides and 2 smaller for the front and back. I drawing also two windows to each side and the window and the entrance door to the front. Two rectangles long as the sides but more larger will be the roof. I trimming the pieces and keep aside.

I put on the pan the baking paper wet and squeezed. I put over the dought and cook at 180 degrees for about 20 minutes, or until the cookies turn golden brown. Then I put the cardboard cut-out masks on the biscuit still hot (and still soft) and cut the different pieces- I stretch them out to cool on a rack.
Meanwhile prepare the icing. I beat the egg whites until stiff and add a little icing sugar at a time, end also add lemon juice.

The cookie becomes hard coolers and I can then build the house by joining the pieces with frosting.
To make the icing does not become hard I cover the bowl containing it with a clean and wet cloth . Expect the house to solidify.
Then sprinkle the house with icing and then decorated with colorful candies

Differenze tra maschi e femmine


Cioccolato e noccioline. Cosa c'è di più buono?
 Le differenze tra maschi e femmine si evidenziano subito, già da piccoli. Anche solo attraverso una  telefonata al papà lontano

Telefonata A
"Allora, allora, allora l'hai visto? L'hai comprato? Vero che è fighissimo. Ma non ti sei sbagliato vero? E' proprio l'ultimo gioco di guerra per la PlayStation. La PlayStation 3 papà. Non un'altra. La 3 eh. Ma tu l'hai comprato vero? Altrimenti dico alla mamma di comprarlo e se lo dico alla mamma lei lo compra subito. Ma tu l'hai comprato vero? Grazie, grazie super grazie. Se dici così vuol dire che l'hai comprato. Ciao ciao."
......
"Ma non dirmi che gli hai preso un nuovo gioco per la PlayStation a pochi giorni da Natale...."
" Guarda che io non ho neanche fiatato. Ha fatto tutto da solo".
"Ah."

"Mamma sono arrabbiata perché papà dice le bugie. Mi ha detto che aveva la televisione accesa, ma non è vero lui non telefona mai con la televisione accesa. Anche perché poi lui vede solo il canale con gli animali". (National Geographic ndr).

Collegare la telefonata con il suo autore

Pane al doppio cioccolato e nocciole
  • 300 gr di farina 00
  • 250 gr di cioccolato fondente (50% di cacao)
  • 200 ml di latte
  • 100 gr di cacao amaro
  • 100 gr. di noccioline tostate
  • 80 gr. di zucchero
  • 50 gr di burro
  • 1 cubetto (25 r)  di lievito di birra
  • 1 uovo
In un pentolino lascio sciogliere dolcemente il burro con con 100 gr di cioccolato fondente. Gli altri 150 gr li trito a pezzi non troppo piccoli. Trito grossolanamente anche le nocciole e metto insieme i due ingredienti.
Mentre il cioccolato fuso si raffredda mescolo gli ingredienti "secchi". Metto insieme farina, cacao e zucchero.

Mescolo poi gli ingredienti "liquidi". Al cioccolato fuso (ormai tiepido) aggiungo l'uovo.  A parte stempero il lievito di birra con un poco di latte (non freddo da frigorifero, altrimenti il lievito non si attiva).

Mescolo gli ingredienti secchi con quelli liquidi, aggiungo il lievito stemperato nel latte e inizio a mescolare mentre aggiungo un poco alla volta il latte rimasto.

Lascio l'impasto nella terrina che avvolgo in un telo bagnato con acqua calda e metto il tutto a riposare in un luogo protetto dagli spifferi e dalle dita dei bambini (chiudo il tutto in forno) per circa un ora o più.

Trascorso il tempo necessario per gonfiare bene l'impasto aggiungo al tutto le nocciole e il cioccolato che avevo tritato prima. Mescolo con una spatola altrimenti i pezzettoni di cioccolata si fondono e restano appiccicati alle mani (che poi mi toccherà leccarmi!).

Taglio un bel pezzo di carta da forno. La bagno e l'adagio in una teglia rettangolare dai bordi alti (quella per i plumcake tanto per intenderci) facendola sbordare.
A questo punto verso il composto e lascio riposare il tutto per un altra oretta circa.

Accendo il forno sui 180°. Lo lascio scaldare e poi inforno il pane per un ora scarsa.

Double chocolate and hazelnut bread

  • 300 gr. flour 00
  • 250 gr. dark chocolate (50% cocoa)
  • 200 ml milk
  • 100 gr.cocoa powder
  • 100 gr. roasted hazelnus
  • 80 gr. sugar
  • 50 g butter
  • 1 cube (25 gr) of yeast
  • 1 egg
 In a small saucepan I gently melt the butter with 100 grams of dark chocolate. Chop the remaining 150 g in large pieces. Coarsely chop the hazelnuts and mix well the two ingredients.
I put together the ingredients "dry" flour, cocoa and sugar

Then the ingredients "liquid" : melted chocolate (now not so warm) add the egg. Apart I dissolve the yeast with a little bit of milk (not so cold from the refrigerator, otherwise the yeast will not activate).
I mix the dry ingredients with the liquid, add the yeast dissolved in milk. Mix and add the remaining milk.

I leave the dough in the bowl wrapped in a cloth soaked in warm water and put everything to rest in a place protected from drafts and fingers of children for about an hour or more.

After the time required to inflate the dough I add the hazelnuts and the chocolate that I chopped first. Stir with a spatula, otherwise the chocolate pieces will stick to the hands (which I'll have to lick!).
I put the dough in a mold for the plum cakes and i let risefor an hour.

I turn the oven on 180 degrees and then bake the bread for less than one hour.

Insalata spazzaneve


E' il mango che porta il raggio di sole, mentre il lime il ricordo dei luoghi più caldi


Uffa oggi nevica. Intendiamoci la neve mi piace ma non

  • in citta. Che tanto non resta lì ma al massimo si trasforma in fanghiglia grigiastra
  • quando (come oggi) dovrò fare la pallina del flipper per tutta la città e la neve rallenterà di sicuro tutti i miei spostamenti e oggi proprio non me lo posso permettere
  • quando sogno di restare a casa sotto le coperte a leggere un bel libro (ma anche uno brutto va bene lo stesso)

Guardo fuori dalla finestra e cadono dei fiocchi grandi come cornflakes.
E allora faccio finta di essere al caldo. Mi preparo una bella insalata, ma di quelle dal sapore esotico, che sanno tanto di sole.

Apro il frigorifero e guardo il petto di pollo alla griglia avanzato ieri sera. Ecco giusto te cercavo. Questa è l'occasione giusta per trasformarti da ranocchio (vabbè pollo) a principe dell'estate.

Ho pure un mango. L'altro giorno al supermercato erano in offerta e .. io adoro il mango, ne ho fatto scorta. Ne ho comprati due. Il primo ha fatto appena in tempo a chiedere "permesso" per entrare in casa che... beh  era gia scomparso.
Perchè guardate me? Io cosa c'entro?
Il secondo sapevo già che sarebbe finito qui. Avevo sentito le previsioni del tempo e mi ero detta "Questa volta non mi lamento. Se arriva la neve la combatto con l'insalata di Nigella"

Si perchè questa insalata è inspirata a una ricetta di Nigella Lawson.  L'idea di mescolare pollo e mango viene da lì.
Ed eccoci

Insalata di pollo e mango

  • Un mango tagliato a cubetti
  • Un petto di pollo cotto alla griglia tagliato a cubetti
  • Un poco di insalata valerianella (o anche soncino)
  • Due piccoli cipollotti tagliati a rondelle
  • Il succo di un lime
  • Olio di oliva
  • Sale
Qualche grano di pepe rosa per guarnire

Mescolo tutti gli ingredienti e condisco con il succo di lime, sale e olio di oliva.
Guardo fuori dalla finestra e la neve non cade più.
Funziona!

Snowplough's salad




It's snowing today. I like the snow but not
  • inthe city as it turns into a gray mud
  • when (like today) I'll turn into the ball game all over the city and the snow will slow down all my movements and I can afford it
  • when I dream of staying home under the covers reading a good book (but also a bad it's ok).

I look out the window and it's falling flakes as big as cornflakes.
I pretend to be in a sunny place. So I prepare a nice salad with an exotic flavor.

I open the refrigerator and look at the advanced grilled chicken breast from last night.
Here you are! I'm just looking for you. This is your chance to transform from Frog (ok, chicken) in the king of the summer.

I also have a mango. The other day at the supermarket were on offer and .. I love mango, I did stock. I bought two.
The first one has barely had time to say "good morning" coming home ... and it disappeared.
Why you look at me?
The second I knew I would have done. I had heard the weather forecast and I said to myself  "This time I'm not complaining. If the snow comes I will fight it with the Nigella's salad"

Yes, because this salad is inspired by a recipe by Nigella Lawson. The idea of mixing chicken and mango comes from there.

And here we are
Chicken and mango's salad
  • A mango cut into cubes
  • A grilled chicken breast, cut into cubes
  • A little salad of lettuce (or even soncino)
  • Two small onions cut into rings
  • The juice of one lime
  • Olive oil
  • Salt
  • A few grains of red pepper for garnish

I mix all the ingredients and season with lime juice, salt and olive oil.
I look out the window and the snow does not fall more.
It works!
