Polpette con salsa al prezzemolo

Polpette. Un restyling della carne avanzata


L'arrosto del giorno prima? Eh no non si può proprio riportarlo in tavola così com'è.  Figurarsi se a casa mia lo mangiano!
Un colpo di bacchetta magica ed eccolo trasformato in polpette che.... si possono mangiare anche con le mani!

Le polpette del restyling
  • Un pezzo di arrosto del giorno prima
  • Prezzemolo
  • Un pugno di pane secco grattugiato
  • Latte
  • Sale e pepe
  • Olio per friggere

Per la salsa
  • Yogurt colato (yogurt del tipo greco, piuttosto solido)
  • Uno spicchio d'aglio
  • Prezzemolo
  • Sale e pepe

Metto nel mixer il prezzemolo pulito e asciugato, lo trito a pezzettini finissimi e lo metto in una terrina lasciandone da parte un cucchiaio. Trito anche l'arrosto e lo metto insieme al prezzemolo. Aggiungo il pane secco e poi a poco a poco il latte. Devo ottenere un composto morbido ma fermo. Insaporisco con sale e pepe e formo delle palline più piccole di una noce.

In una padella scaldo un po'di olio e vi cuocio le polpette (ma posso anche cuocerle in forno ben caldo).

A parte preparo la salsa: taglio a pezzettini piccolissimi l'aglio. Aggiungo il cucchiaio di prezzemolo che avevo tenuto da parte e il vasetto di yogurt greco. Insaporisco con sale e pepe e verso in coppettine individuali.

Ecco le polpette si possono mangiare così come sono, oppure si possono tuffare (anche prendendole con le mani!) nella salsa.

The roast of the day before? Oh no you can not just bring it back to the table as it is. Imagine if my house will eat it!

A magic wand and there it turned into meatballs and ... you can eat with your hands!


Restayling meatballs
  • A piece of roast of the day before
  • Parsley
  • Dry bread crumbs
  • Milk
  • Salt and pepper
  • Oil for frying

    For the sauce
  • Strained yogurt (greek yogurt, rather solid)
  • A clove of garlic
  • Parsley
  • Salt and pepper

I put in a blender cleaned and dried parsley, chopped it into small pieces and put it in a bowl, leaving aside a spoon. I also chopped the roast and put it with the parsley. I add the bread and then gradually the milk. I need to get a soft but firm mass. Season with salt and pepper and roll into balls smaller than a walnut.

In a pan heat a little oil and bake the meatballs (but I can also cook in a hot oven).

Prepare the sauce: I cut small pieces to the garlic. Add a tablespoon of parsley, which I had kept aside and the pot of greek yogurt. Season with salt and pepper and pour into individual cups.


Here are the meatballs can be eaten as is, or you can dip (even taking them with your hands!) in the sauce.
