Nella caverna di Alì Babà

Manca solo l'ultimo tocco finale.
Tutto intorno a me scatole in cartone e in metallo di tantissimi colori.
E così ho visto mais viola, tapioca in perle e no, jelly dai colori improbabili, marmellate e conserve di non so cosa,  minuscoli pesciolini essiccati e altro ancora.

Pesce in foglia

Ingredienti:

  • 4 filetti di merluzzo
  • 1 cipolla piccolina tagliata a fettine sottilissime
  • 1 platano (banana da cuocere) tagliato a fettine
  • 1 pezzetto di lemon grass a pezzettini piccoli
  • 2 pomodori tagliato a fettine

In the cave of Ali Baba

For some time I've been there before. But no place to park and always no time to come in and take a look. But the other day I decided. There was just a little place in front of the shop, I interpreted as a sign of destiny.
I got off the car and after an initial moment of loss I decided. The windows too full of boxes and little boxes and the sign covered with a black dustbin bag certainly does not invite a lot.
I pushed the door and ........Ooooooh wonderful! I entered Nthe cave of Ali Baba.
All around me boxes in paper and metal with many colors. Descriptions in languages indecipherable.
And so I saw purple corn, tapioca pearls, jelly with imrobable colors, jams and preserves unknowed, tiny dried fish and much more.

But the best thing was to discover the true treasure. The refrigerators with fresh products. Fruits not seen, violent colors, purple, red and green phosphorescent vegetables shaped as you like.
And so I asked if they had the two things that one day I crossed the city to search:: banana leaves and lemongrass.
The highly efficient shop owners have a smile clear as only Indians can do. Sure, here it is. Platano? Sure.
So here is the result of my hunting.

Leaf fish

Ingredients:
  • 4 cod fillets
  • 1 onion, cut into tinyslices
  • 1 plantain (cooking banana), sliced
  • 1 piece of lemon grass cut into small pieces
  • 2 tomatoes, sliced
  • half cup of coconut milk
  • 1 tsp curry
  • 1 tsp turmeric
  • a pinch of salt
  • banana leaves enough to make 4 packets or a single large package.
I wash the banana leaves well and then I cook it quickly in boiling water. This will make them a little bit softer and allow me to bend without breaking.
I cut the leaves into 4 squares large enough to hold the fish fillets.
On each square of banana leaves I put a layer of onions. Above I put the slices of plantain, and then the cod fillets.
I put over the fish slices of tomato and the lemon grass.
In a cup I stir coconut milk with spices and salt.
Season the fish with 3 tablespoons of coconut milk flavored.
I fold very carefully  the banana leaf and bind them with a cooking string.
I place the packets in a baking dish and bake at 170 degrees for 40 minutes.

=========================================================
I discovered that I do not like to sit at the table. When I'm alone I prefer to sit on the corner of my "island" in the middle of the kitchen, next to the window. Without shoes, feet on the chair and theplate on the knees.
I like to sit there and look out the window, maybe not really see what's there and get lost in the confusion of my thoughts.
But sssshhhhh do not tell my children that otherwise they would criticized me

Flan potato and chicory
1 kg of potatoes
2 heads of chicory
1 onion blonde
200 g of Bitto

I boil the potatoes, then i peel and mash it. Add salt, mix the puree obtained and set aside.
Cut the onion into thin slices and fry in oil until they become blondes.
Add the chicory, cut into small pieces ans salt. Cook for several minutes.
I grease a plum-cake mold.

I cover the bottom and sides of the mold with the mashed potatoes, I put the chicory on the center and I cover with a layer of mashed potatoes.
I put all in the oven at 180 degrees for about half an hour.
In the meantime I cut the bitto heese into thiny slices.
The pudding will be golden brown. I remove him from the mold and place it on a serving plate. I put on its hot surface the bitto's slices that will melt smoothly.

Plum cake with marron glaces

I did not know what to do with the marron glaces stationed dangerously in my kitchen. I remembered that some time ago I saw Maurizio Santin on television that talked about this recipe to try for breakfast. I look in his book and I found it
I propose here slightly modified: without glucose (which I didn't have) and 100 grams of sugar less.ù
  • 500 g of flour
  • 300 g marron glaces
  • 250 g butter
  • 200 g icing sugar
  • 5 eggs
  • 125 g of milk
  • 50 g of rum
  • 10 g baking powder
In a bowl, I reduce the butter in cream. I add the icing sugar and mix well. I add one egg at a time waiting for each egg is absorbed before adding another.
I mix the milk with rum and pour in the dough. Then add the flour and baking powder. Once I got a creamy mixture I add the marron glaces in pieces and mix it up.
I grease a rectangular mold for plum cakes and flour. Preheat oven to 210 degrees.
Put the mixture into the pan and tapped gently on the table to remove any bubbles.
Bake at 210 for 10 minutes and then cook at 150 degrees until the surface is golden brown and not inserting a toothpick comes out clean inside

 An antidote to the balance
Lately I'm just exaggerating, and my "growing trend" is definitely active.
I even bought a nice balance that when you have lost weight she smiles at you with a nice green hope, indicative of a day when you will definitely wonderful. If you are stable, well you'll have a beautiful orange, that the meaning is "attention .. we are on the edge". But .... In recent days I get up and walk past and not look at her.

If you are stable, well you'll have a beautiful orange, that the meaning is "attention .. we are on the edge". But .... In recent days I get up and walk past and not look at her.
I'm offended.
The last time she screamed a bold and violent red .
She should not do so, especially in the morning when I'm still in a dream world.
Starting with the signal "Attention, attention red alert" means to reach out to a bad day.
Here's my personal antidote
Muesli with apple
  • 4 tablespoons of muesli
  • 2 tablespoons bran
  • 1 pot of yoghurt filtrate (lyogurt greek)
  • 3 teaspoons sugar (or 3 teaspoons of honey)
  • A few very thin slice (a veil) Granny Smith apple
  • Cinnamon
The night before I mix in a bowl muesli, bran, yoghurt and add sugar (or honey). But you can also do without it. I cover with plastic wrap and leave overnight in fridge.
I cut the apple in the morning (better to use the robot to make thin slices thin). I stir the muesli, I put over the apple slices, flavored with cinnamon and a bit of sugar and voila. The antidote is ready.
After a breakfast like this you feel more beautiful and healthier. Despite the unpleasant scale.

  • 4 uova
  • 50 gr di burro
  • la buccia grattugiata di 1 limone
  • 50 gr di lievito di birra (2 pacchetti).
Bollo le patate e le passo nello schiaccia patate. Mescolo con la farina.
Sciolgo il lievito in poca acqua tiepida e l'aggiungo all'impasto.

As evidence of my passion for potatoes, a sweet made of ... potatoes, here it is another of their stunning transformations: Her Majesty the zeppole.
Who has never tasted it has lost a lot from life. The zeppole is the essence of goodness.
It takes time, passion and concentration to do it properly, but .... work pays off

The zeppole are also a typical Neapolitan recipe.

It will be because I'm in the mood to "Amarcord", it will be because of the fortuitous discovery of the notebook with the recipes of my grandmother and mom (and mine too), or simply be that I'm trying to exorcise the beginning of this year, but the fact is that lately I just want to prepare recipes that only come from my childhood. My favorite dishes when I was a child. I mean I do not want to move on, maybe I want to go back.

However, here are two generations in comparison to the same recipe handed down from grandmother to granddaughter. It 'really a family recipe.

The first time I made the zeppole I was eight or nine years, but I was undoubtedly attracted by the mysteries of the oven and the magic of the pan.
It seems that I was born like this: a really food lover. I was only few months old and my grandmother took me to see the windows of pastry shops and she enjoyed a lot to see me cross my eyes to the desire.
Perhaps because of this imprinting, or whether a lack of family, the fact is that nine years I began to cook and prepared especially cakes and sweets.

The potato donuts

In Naples there are two types of donuts: zeppole of St. Joseph, prepared for March 19, made of flour and topped with custard and black cherry, and the "graffe" from krapfen, made with the potates and prepared for Carnival .

In my house the zeppole were only those with potatoes.
  • 1 kg of flour
  • 500 gr of potatoes
  • 4 eggs
  • 50 gr butter
  • peel of 1 lemon (grated)
  • 50 gr of baker's yeast (2 packages).
I boil the potatoes and mash them. Stir in the flour.
I dissolve the yeast in warm water and add to the mix.
I add all ingredients and work together until the mixture is elastic.
With the dough i do some little balls that I work until I have some cylinders. Then I join the ends of the cylinders to form a knot.
Leave for about half an hour.
In a pan, I put a lot of oil and bake it until it becomes hot. Then I bake the donuts turning it.
I let its cool on kitchen paper to absorb the oil. Then I sprinkle them with sugar and serve warm.
