Il giorno dei single


Tra gli ingredienti del "ragù della mamma" c'è tantissimo amore


"Mamma tutti hanno festeggiato SanValentino...."
"Eh si.."
"Io però sono single."
"Beh... hai anche 13 anni. E' un po' prestino per cacciarsi in un guaio". (trovarsi in coppia ndr)
"................."
"Ma oggi non è la giornata dei single?"
"Si. Mi sembra di aver sentito dire che oggi è la giornata dei single".
"Allora festeggiamo?"
"Mi sembra un'ottima idea."

E per festeggiare il figlio tredicenne, nonchè single, la mamma prepara il piatto "come lo fa mia mamma non lo fa nessuno", e cioè il ragù alla bolognese.


Ragù alla bolognese

  • 250 gr di carne trita di manzo
  • 250 gr di carne trita di maiale
  • 1 carota
  • 1 cipolla
  • 2 gambi di sedano
  • 400 gr di polpa di pomodoro (2 lattine)
  • mezzo bicchiere di vino rosso
  • olio di oliva
  • sale e pepe
Taglio la cipolla e la carota a pezzettini piccolissimi. Tolgo i fili ai gambi del sedano e lo taglio a pezzettini.
In una pentola abbastanza larga metto l'olio a scaldare. Aggiungo la cipolla che lascio diventare trasparente.
Aggiungo quindi la carota e il sedano.

Lascio cuocere un pochino, finchè il soffritto profuma ben bene.
Aggiungo la carne e lascio che si colori un pochino. Aggiungo quindi la polpa di pomdoro, sale e pepe. Lascio cuocere per circa un oretta a fuoco basso. Durante questo periodo mescolo di tanto in tanto e aggiungo il bicchiere di vino rosso.

A parte cuocio la pasta (in questo caso spaghetti, ma di solito tagliatelle). Scolo, condisco con il ragù e spolvero con une bel po' di parmigiano grattugiato.
Ecco è pronto.

"So we celebrate?"
"It seems a good idea."

And to celebrate the old son, as well as single, the mother prepares the dish  "as my mom does not do it for anyone, and that it is: the Bolognese sauce.



Bolognese sauce
  • 250 gr of minced beef
  • 250 gr minced pork
  • 1 carrot
  • 1 onion
  • 2 stalks of celery
  • 400 gr of  tomato's sauce (2 cans)
  • ½ cup red wine
  • olive oil
  • salt and pepper
I cut the onion and carrot in small pieces. I take off the wires to the stalks of celery and cut into small pieces.
In a large saucepan put the oil to heat. I let cook the onion until they becomes transparent.
Add the carrot and celery.

I let it cook a little, until it smells very good.
I add the meat and let cook a little. Then I add the tomato's sauce, salt and pepper. I cook for about an hour. During this period I stir from time to time and add a glass of red wine.

I cook the pasta (spaghetti in this case, but usually noodles). Drain, season with the sauce and sprinkled with one lot 'of parmesan cheese.

Panino per un ometto

Un po' di brio per il solito hamburger
Il mercoledì è il giorno del pranzo tete-a-tete con il mio ometto. Siamo entrambi molto abitudinari e andiamo sempre a mangiarci un doner kebab sempre nello stesso posto, dove ormai ci conoscono bene.
La scena è sempre molto carina:  mio  figlio che mi apre la porta e mi sposta la sgabello per farmi sedere. Non so dove abbia imparato a comportarsi così, ma mi fa sentire una regina. Non sono abituata a tutte queste attenzioni e a volte sbaglio. "Mamma, vado io a prendere i piatti." mi sussurra guardandomi con rimprovero. Io rido dentro me stessa ma tento di non far vedere che davvero non so come ci si comporta in queste occasioni.

Altra cosa nuova. Stare accanto a un ometto geloso. Non ho mai avuto "fidanzati" gelosi. Non l'avrei mai sopportato, ma come si fa quando ci si trova un figlio di tredici anni geloso?
"Guarda nel piatto!" "Scusa?" "Non alzare lo sguardo, c'è uno che ti guarda." "Ma stai scherzando?" e rido
"Guarda che non scherzo se lo guardi ti dò un pizzico. E non ridere che non c'è niente da ridere!" Ovviamente non posso fare a meno di ridere ancora di più. Mi guardo intorno ma, sinceramente non vedo nessuno che mi stia "puntando", o almeno credo.
"Ahi! Ma sei pazzo?" "Te l'avevo detto che se lo guardavi ti davo un pizzico!" "Guardare CHI???" "Shhhh, abbassa la voce. Ma lo fai apposta? Il tipo là nell'angolo. Ti fissa da quando siamo entrati" "Ah è un tipo? Pensavo fosse un cappotto. Spè che mi metto gli occhiali che guardo. Secondo me il tipo sta cercando di capire come rubarmi la borsa." E rido frugando nella borsa. voglio proprio vedere chi è il rivale di mio figlio.
"Oh madonna Artur, ma avrà vent'anni, forse." "Appunto! I peggiori". Scoppio a ridere e ricevo in cambio un calcio sotto il tavolo e un occhiataccia.

Ho inventato questo hambuger per il mio bimbo-ometto. Le spezie per il kebab lo rendono piccantino e caldo, come il suo carattere passionale. Il prezzemolo aggiunge quella nota di freschezza che in mio figlio mi fa tanta tenerezza. Infine la cipolla, che addolcisce il tutto, come il suo sguardo innamorato.


Hamburger speziato

Per due persone:
  • 150 gr di polpa di manzo scelta tritata
  • 1 piccola cipolla tritata a piccoli pezzettini
  • 1 mazzetto di prezzemolo tritato finissimo
  • 1 cucchiaino di spezie per il kebab (le vendono già pronte, altrimenti un misto di cannella, peperoncino, cumino, coriandolo)
  • sale e pepe
  • 2 panini arabi
  • un pochino di insalata mista
  • 2 pomodorini belli sodi
  • maionese
In una terrina metto la carne trita, il prezzemolo, la cipolla, le spezie e il sale e il pepe.
Ora arriva il momento migliore: mescolo il tutto con le mani. Il calore sprigiona il magico odore delle spezie. Copro il tutto con la pellicola trasparente e lascio a marinare in frigorifero per un pochino.
Nel frattempo lavo l'insalata e la scolo. Lavo il pomodoro e lo taglio a fettine sottili.
Prendo i due panini arabi e li taglio a metà ma non completamente. Il pezzettino di pane chiuso impedirà agli umori dell'hamburger di perdersi sul tovagliolo, o peggio sulle mani.
Acquisto sempre i panini arabi da un panettiere egiziano vicino a casa mia. I suoi panini, pur restando soffici e delicati, sono di un bel colore ambrato che dice "mangiami mangiami".

Mentre scaldo la griglia prendo la carne e la divido in due parti. Sempre con le mani (quanto mi piace pasticciare!) formo due hamburger a cui tento, senza successo, di dare una forma più o meno regolare.

Mentre cuocio gli hamburger sulla griglia adagio sui panini il pomodoro a fettine e l'insalata. Finisco il tutto con la carne e per mio figlio aggiungo la maionese. Per me no, sono un po' ipocrita e mi dico che è la maionese che mi fa ingrassare.

Wednesday is the day of dining tete-a-tete with my little man. We are both very routine and we always eat a doner kebab in the same place, where we now know well.

The scene is always very nice to me, my son opened the door and move the stool for me to sit. I do not know where he learned to behave like that, but it makes me feel like a queen. I'm not used to all this attention and sometimes I'm wrong. "Mom, I'm going to take the dishes." he whispered looking at me with reproach. I laugh inside myself but I try not to show that I really do not know how to behave on these occasions.

Another new thing. Being next to a jealous little man. I never had "boyfriends" jealous. I never would have wanted, but as you do when you have a child of thirteen jealous?

"Look in theplate!" "Excuse me?" "Do not look up, there is one who looks at you." "Are you kidding?" and I laugh."Look, I'm not joking if you look at him I'll give you a hint. And do not laugh there's nothing to laugh about!" Of course I laugh more. I look around, but frankly I do not see anyone who is "focusing", I guess.

"Ah! Are you crazy?" "I told you that I would have done if you looked at him!" "Watching Who??" "Shhhh, lower your voice. But you do it deliberately? the guy in the corner. He looks at you since we went in" "Ah is a type? " I thought it was a coat. Wait I will get glasses and then I watch. I think he is trying to figure out how to steal my purse. "And I laugh searching in the bag. I just want to see who is the rival of my son.

"Oh my god Artur, but will have twenty, maybe." "Exactly! The worst. " I burst out laughing and I get in return a kick under the table and glances.

I invented this hamburger for my little man-child. The kebab's spices make it spicy and hot as his passionate character. Parsley adds that note of freshness that in my son makes me so tenderly. Finally, the onion, which sweetens the whole, as his gaze fell in love.

Spicy Hamburger

For two people:

  • 150 gr of minced beef
  • 1 small onion, chopped into small pieces
  • finely chopped parsley
  • 1 teaspoon of spice for kebab (a mixture of cinnamon, pepper, cumin, coriander)
  • salt and pepper
  • 2 Arab rolls
  • a little bit of mixed salad
  • 2 firm tomatoes
  • mayonnaise

In a bowl, I put the chopped meat, parsley, onion, spices and salt and pepper.
Now comes the best time: mix everything by hand. The warmth releases the magical scent of spices. I cover everything with plastic wrap and let marinate in the refrigerator for a bit.
Meanwhile, I wash the lettuce and drain. I wash the tomatoes and cut into thin slices.
I take the two Arab sandwiches and cut them in half but not fully. The piece of bread closed prevent the  falling of the hamburger's gravy on the towel, or worse on the hands.

I always buy bread from a baker Egyptian Arabs near my house. His sandwiches while remaining soft and delicate, have a nice amber color that says "Eat me Eat me. "

While the grill heats up I take the meat and divide into two parts. Always with my hands (I like to mess around!) I do two more or less regular hamburger.

While cooking the burgers on the grill I put the tomato slices and lettuce on sandwiches. I finish everything with the meat and add the mayonnaise for my son. For me, no, I'm a bit 'hypocrite, and I say it's the mayo that makes me fat.

We eat and we continue to talk.
